Spaghetti Vongole W/Bread Crumbs

This recipe was developed for my FODMAP & COELIAC Friends

1kg pippies/clams

4 garlic chives

100 grams pancetta

1 tin crushed tomatoes

250ml white wine

500 grams spaghetti

1 slice stale bread

bunch of parsley

1 lemon

feeds 12 halve for 6

Boil a large pot of water with a large handful of salt

Blitz stale bread in a food processor add to a dry hot pan with small drizzle of oil fry until crisp,

put aside and wipe down pan

Finely chop pancetta and fry until brown. Remove and set aside keeping the fat from the pancetta

Finely chop garlic chives, taking the pan off the heat add chives to pancetta the fat lightly cook being careful not to fry

Add in crushed tomatoes and wine simmer for 3 mins add in clams close the lid and cook for 5mins,

checking to see they've opened wait another 2mins for more to open

Meanwhile drain pasta and add to clams stir in a good drizzle of olive oil and the fired pancetta

Finish with chopped parsley and squeeze of lemon juice
