Chocolate Torte

Ingredients

10 eggs separated

500g high quality dark chocolate - at least 70%

300g salted butter

300g caster sugar

4tbsp high quality cocoa powder + extra for dusting

1 tsp of vanilla

zest of an orange

Dollop cream

Method

Pre-heat the oven to 180 degrees.

On a double boiler melt together butter and chocolate, once melted remove from heat.

Using a hand whisk, whisk in sugar, vanilla, orange zest and egg yolks.

In a separate bowl beat egg whites with an electric mixer until soft peaks form.

Fold in gently and by quarters chocolate mix into the egg whites.

Bake for 30 minutes.

Turn off the oven and remove cake, with two dinner plates press down on top of the cake.

Return cake back to the warm oven with the plates still on top and allow to set in the oven.
