Chocolate Chip Cookies
My new fave thing is going to a supermarket and looking at the insane amount of preservatives there are in the “homemade” baked goods. I counted 7 separate codes in their baked choc chip cookies… 7! I feel I don’t need to actually go into why this is an issue but they don’t need to be there and we are not required to consume them.
I also feel like we have been lead to think that baking has to be hard because of the rise of cook books from highly skilled pastry chefs. Beatrix bakes we love you and your book is perfect but we also don’t need to bake Lune croissants from scratch. But then we think that even making a simple “cookie” is too hard and it takes too much of our time.
Baking can be most therapeutic thing you can do, to zone out and just do a simple bake and then take the finished product to work the next day. I’m here to tell you these cookies take 40 minutes to prepare, including some dishes time. This was 40 minutes I wasn’t on TIKTOK or Instagram doom scrolling. It was nearly a 40 minute mediation where I actually switched off slowly measuring the cups of ingredients.
They’re perfect and they only have one fancy ingredient cake flour but for $3 it’s worth it.
Ingredients
170g salted grass fed butter
3 cups cake flour
1/2 a cup of Tipo 00 flour
1 cup brown sugar
1/2 cup caster sugar
1tsp of baking powder
1tsp of bi-carb
2 eggs
1 bag (250g) of dark chocolate chips
1 bag (250g) milk chocolate chips
Method
Pre heat oven to 180 degrees and line a baking tray with baking paper.
Cream (with either a stand mixer or handheld electric mixer) room temp butter and sugar until the sugar turns pale.
Beat in one egg at a time until full incorporated.
Add all dry ingredients mixing until the mixture forms a dough.
Pour in all of the choc chips and mix them into the dough with your hands.
Put the mixture in the fridge for 30 mins
Using a ice cream scoop scoop out the cookies on to the tray - these don’t spread out too much so they handle being close together.
Bake for 12 mins then allow to cool before serving.
