A dessert to celebrate platonic love with

Valentines day is just around the corner and I hate this day so much. Hate is a strong word to use for a day that is meant to celebrate love although it tells us again that romantic love is the only love worth celebrating. Valentines day gives this energy of the ‘haves’ and the ‘nots’ but there is just some much love around us all the time and it is so important to take a moment to celebrate it.

I invite you to gather ALL your friends over this weekend (not just the girls) in the name of PLATONIC LOVE and devour this airy, chocolatey mousse. Talk about the reasons you’re thankful for each other, the year ahead or even just the week that passed.

Ingredients

2/3 cup caster sugar

180 grams Dark Chocolate – 70%

90 grams Milk Chocolate

1 egg yolk

4 egg whites

2/3 cup hot milk

Method

Heat a sauce pan with a small amount of water and melt chocolate in a bowl over the water, making sure not to let the bowl touch the water.

Put chocolate to the side and remove the water from the saucepan replacing it with the milk.

Heat the milk to boiling and remove from the heat.

In a bowl large enough to hold the entire mousse, whip the egg yolk into the chocolate and then slowly whisk in the milk until it is fully incorporated into the chocolate

Whilst the chocolate is cooling slightly whip eggs whites with an electric hand or stand mixer until soft peaks form.

Once you have soft peaks begin to add in caster sugar gradually until all combined this mixture will start to resemble the start of meringue. Once the egg whites are looking glossy they are ready.

Using a rubber spatula add scrape all the egg whites into the bowl with the chocolate and using a whisk gently fold the egg whites in.

Once the egg white is fully incorporated into the chocolate cover and place in the fridge for about an hour to chill.

Serve with fresh berries or whipped cream.

** If you want to add some orange zest along the way add it to the chocolate
