A REALLY GOOD CITRUS CAKE
Last week I went into the supermarket and my absolute favourite thing is to go through the bakery section and look at the ingredients.
You nearly always find something with the most insane list of preservatives and colourings in the ingredient list.
My mission is to re-create something even better and so easy that it encourages you to want to bake and not be scared that it is all too hard.
Because baking is easy and it makes your house smell nice for a day.
Ingredients
1 1/2 Cups Self Raising Flour
1 Cup Caster Sugar
1/2 Cup Natural Greek Yoghurt
The zest of two oranges
1/2 Olive Oil
1 tsp Vanilla paste
1 tsp Nutmeg
3 eggs
Syrup/Glaze
1/2 cup caster sugar
1/4 cup water
The juice of one orange.
Method
Pre-heat the oven to 160 degrees Celsius.
Using an electric hand held or stand mixer beat in the zest of the oranges to infuse the sugar with the oils of the orange.
Beat in the eggs one at a time until the mixture is pale and fluffy.
Add in the yoghurt, vanilla, nutmeg and olive oil and beat until just combined.
Sift in the flour and fold it to the wet mixture.
Bake for 35-40 minutes
Whilst the cake bakes make the syrup add sugar, wate and the orange juice to a saucepan, bringing it to the boil for 3 minutes or until it thickens slightly
Once the cake is cooked brush the syrup over the top of the cake immediately allowing it to infuse into the top crumb of the cake
