NACHOS
Nachos is so simple you for sure don’t need a recipe - although in saying that this one is not made from crap it is made from lots of good and yummy things that make it way less indulgent than something you would order. There’s some chicken in it to make it a more a substantial meal and it is finished with greek yoghurt and not sour cream. It is the perfect recipe for a Thursday or Friday night when you can’t be bother cooking but need something that feels comforting and fresh. Everything except the fresh ingredients are from Wholesome Market.
Serves 2
Ingredients
1 Chicken breast
1 tsp of tomato paste
3 tbsp water
2 tsp taco seasoning
1 bag of Tortilla Chips Totopos Tortilla Chips
50 grams of cheddar cheese shredded
1/2 an avocado
2 tbsp of Tomatillo Salsa
Salt & Pepper
1/2 a red onion finely chopped
1 lime
1/2 a bunch of coriander finely chopped
1 tomato roughly chopped
Olive oil
3 tbsp of greek yoghurt
Method
Pre-heat the oven to 180 degrees Celsius on a fan function.
In a small bowl add the avocado and mash until it is smooth add in the onion, tomatillo salsa, salt, pepper and the juice of half the lime.
In another bowl mix together the coriander and the tomato.
Coat the chicken lightly with the taco seasoning.
Add a drizzle of oil to a cold pan and turn the heat on to medium and once the oil is warm add the chicken and grill on both sides.
Turn the heat to low and add in the tomato paste and water and stir scraping the bottom of the pan. Add a lid to the pan and allow the chicken to cook on low until fully cooked.
Once the chicken is cooked take it out of the pan and chop it up and place it into the pan and mix it back into the pan with the remaining juices.
In a baking dish place a layer of the corn chips down then half the chicken followed by a handful of cheese.
Add another layer of corn chips and add the remaining chicken and cheese. Bake the nachos in the oven for 10 minutes or until all the cheese is melted.
Once it is cooked layer on top the tomato/coriander mix, avocado and greek yoghurt.
