THE ULTIMATE PRAWN SANDO
Spring is coming and it is time to take hold of sunny Sunday afternoons with the perfect sandwich.
I present to you the ultimate Prawn Sandwich.
In the 2020 lockdown my roommates and I used to prepare for a new week with a prawn roll and wines on our balcony.
We would spend nearly all Sunday morning gathering ingredients and preparing our lunch feast.
This recipe is born from that memory.
It’s zesty and fresh with the correct amount of bacon.
I am telling you right now you will want to double the recipe.

Ingredients
Handful chopped basil
1 tbsp mayo
1 stick of celery finely chopped
300g cooked prawns (peeled) or ½ kg un-peeled
Juice of half and zest of whole lemon
3 rashers of streaky bacon cooked
6 slices of high tin sandwich bread lightly buttered on one side
Salt and Pepper to taste
Method
Chop basil and celery add to mixing bowl, season with salt and pepper.
De head, vein and shell the prawns. Chop them and add to bowl.
Mix in lemon juice, zest and mayo.
Fry bacon and drain fat cut in half.
Toast bread and butter one side.
Assemble sandwich with mayo first then prawn then bacon.
Cut into triangles.
