CHRISTMAS ROCKY ROAD
Last year I made this ROCKY ROAD as a present just before Heath and I went to Europe. I never posted it here just on our instagram. This is the perfect secret santa gift that works as something enjoyable and not landfill. It has a lot of sugar so be sure to cut it up into SMALL pieces.
Ingredients
200g Macadamias
200g Pistachios
280g Marshmallows (chopped into quarters)
190g Allen’s Raspberries (chopped in half)
150g Peppermint Candy Canes (roughly crushed)
1 packed of scotch fingers (very roughly chopped)
1 packet of snakes (green colour removed)
650g best quality white chocolate
Method
Line a loaf tin with baking paper.
Melt together all of the chocolate in a large bowl over a double boiler.
Add in all of the other ingredients reserving half of the candy canes.
Combine the mixture so that all the bits are covered with white chocolate.
Pour the mixture into the loaf tin and with a spatula press the mixture down into the tin and sprinkle the remaining candy canes over the top.
Allow to set in the fridge for 4 hours or overnight
To cut boil the kettle put the water in a jug and warm up a sharp knife and slice as if it were bread and then cut up further into smaller pieces.
