STRAWBERRY & LIME CORDIAL
Every week I go to my local grocer and follow the specials, often it is fruits and vegetables that are in season and are having a ‘good’ season. My grocer will pass on lower prices it is a win win.
It’s funny because my grocer looks ‘fancy’ and ‘expensive’ because it is presented beautifully. However, it is cheaper than anything you could ever get from a BIG supermarket and it will last 3x longer in the fridge.
Anyway there were 3 punnets of strawberries for $7 so I purchased them for smoothies and porridge. You could even freeze them for the colder months when you don’t want to buy frozen ones from Chile.
I decided to turn one punnet into cordial for summer drinks.
Ingredients
250g of Fresh strawberries chopped into quarters
1 1/2 cup
Zest and juice of one lime
Method
In a saucepan add the strawberries and cover with water
Bring to the boil and simmer for 15-20mins on a medium heat
Pour the water into a mixing bowl through a mesh sieve
Pour the water back into the saucepan and add the sugar mixing until it dissolves
Bring this to the boil for a minute
Remove from the heat and add juice and zest of lime
Pour into a bottle or jar
