Fried Eggs With Herby Sauce

Ingredients

2 eggs

Handful dill and parsley

Teaspoon of capers

1 anchovy

Salt and pepper

ΒΌ of a baguette cut in half toasted

2 tbsp of olive oil

Method

Heat a fry pan to a medium heat with 1 tbsp of olive oil

Crack the eggs into the pan and turn the heat up to high for 1 – 2 minutes or until the whites are white and start to crackle.

Turn the heat off and allow the residual heat of the pan to cook the eggs

While the eggs are cooking toast your bread and prep your herby sauce by chopping up the dill, parsley, capers and anchovy.

Add the rest of the oil, the herbs, capers, anchovies to a small bowl mix together and season with salt and pepper.

Serve the bread, eggs and herby sauce on a plate and enjoy.
